I may seem young, but I’ve got personality.

I live lightly, gracing eggs (fried, boiled, frittatas, and omelettes) and pairing perfectly with vegetables like asparagus and ratatouille. I shine on vegetable salads and Caprese with buffalo mozzarella and tomatoes. I’m determined to reduce acidity in tomato-based sauces. Try me in pinzimonio dips, to season beef carpaccio with rocket, or as the finishing touch on risottos and salmon preparations. I enjoy exploring fresh cheeses such as mozzarella, ricotta, and goat cheese. I also love complementing strawberries, fresh fruit salads, or baked fruit with ice cream. Don’t underestimate me – I may be young, but I’ve been naturally aged in barrels crafted from seven types of fine wood. Five years is no small feat!
