The secret lies in imbuing Midolini Balsamic condiments with the incredible strength handed down to us by our land—not to keep it frozen in time but to inspire again and again, creating new paths of taste and imaginative creativity.

THE VALUE OF A LAND BORN FROM THE SEA

Our green sea was once blue. It is from the depths of the Adriatic Sea that the excellence of our terroir originates, with layers of marl (limestone clays) alternating with layers of sandstone (calcified sands). The characteristic and value of the Colli Orientali del Friuli come from a contamination between water and earth and are expressed through the production of fine wines. On our hills, in our vineyards, cultivated across 35 hectares of the one hundred hectares that make up the estate, the Refosco and Friulano grapes grow and are processed according to tradition, in line with the DOC Colli Orientali del Friuli regulations, which protect high-acid grapes with excellent sugar content to give life to the magical drops of our Balsamics vinegar. We believe that only from great grapes can great must be born.
