Let’s be honest, I don’t belong in just one dish. I love variety. I’m versatile and adore risottos, every type of red and white meat, and fish like salmon and swordfish. I’m superb with aged or blue cheeses like Gorgonzola and Castelmagno, as well as savoury vegetable and cheese tarts. I’m the finishing touch on all veloutés, especially cauliflower and broccoli. I light up roasted pumpkin specials. Try me with creamy polenta and cheese, and we’ll talk again.  I’m excellent on desserts and baked fruits, trust me. Where did I grow up? For 15 years, Midolini must ages in barrels made from seven types of fine wood. That’s where I matured. Naturally, of course.

What sensations do I bring to the palate?

I’m silky, with a rich aroma and a well-rounded acidity, featuring hints of oak and acacia.
